With practically a third of its lands dedicated to agriculture, the southwestern department of Champagne Ardennes, Aube is one of the region's key champagne cultivators. Named after the River Aube (a tributary to the Seine), its entire northern section is a practical patchwork quilt of vineyards and rapeseed fields, broken only by its unrepentant waterways. Further south, mystical woodlands and giant lakes begin to take shape, blending with the mountains along the border with Burgundy. The department has its own Regional Park, Foret d'Orient, which earned its name due to supposedly harbouring buried treasure brought back from the Crusades. It also shelters Les Grand Lacs, which, with over 500 square miles of water, are perfect for sailing and windsurfing. Troyes (population 60,000) is by far the biggest town in the department, and was the capital of both the old Champagne province and its current modern day department. Today, it remains the home of one of France's most stylish Gothic cathedrals, as well as numerous wine cellars and a town square shaped like a champagne cork! Other destinations include the small village of Chaource (home of the famous cheese); and the even smaller Essoyes (pop. 600), a mecca for fans of the pre-eminent painter Pierre-Auguste Renoir as it still features his original workshop and ex-residence.
