Ile-de-France's largest department is the modern day incarnation of the old province of Brie Francaise, birthplace of the world famous soft cheese. Its stunning chateaux at Fontainebleau and Vaux-le-Vicomte were forerunners to Versailles, pioneering the same architectural opulence (if on a slightly smaller scale). Their effective obscurity, however, when compared to the country's past headquarters, means they're also far less crowded; and a day out in Fontainebleau's royal palace and surrounding forest (one of France's largest) can be enjoyed in relative peace. Throughout the department, towns retain souvenirs from ages past, most notably from medieval times. Starting in the south, the fortress settlement of Moret-sur-Loing is well worth seeing for its once impregnable ramparts; the original base of the Knights Templars can be found near western Coulommiers; and the rose-laden town of Provins by the eastern border hosts a Middle-Ages-themed festival every May, with everything from jesters to jousting competitions. Meaux is the place to visit to sample some original Brie cheese (and Meaux mustard), as well as witness the beautiful Cathedral of St Etienne, constructed in the 12th century. Elsewhere, the hexagonally-walled chateau at Blandy-les-Tours and the glorious azure-roofed Chateau de Champs-sur-Marne are arguably, despite their becoming looks, not the most well-known castles in the department... you'll have to travel to Marne-la-Vallee and Europe's most popular theme park for that!
