Tucked between the Loire and Dordogne valleys, little Limousin is a secluded slice of traditional Gallic pastoralism frozen in time. A land of rolling hills, fertile fields, tumbling streams, calm lakes, and deep forests, it's changed remarkably little in the last few hundred years, and has served as a French heartland getaway for nearly as long. The population is just 725,000, lower than any other region on mainland France, and there are plenty of places where you won't see anyone for miles. Chestnut-red Limousin cattle are common, however; as are flocks of sheep, and shoals of trout and pike in the lakes. Such a profusion of livestock means the local cuisine is excellent. Organic beef and lamb are on every menu; and duck and goose are also popular, as is foie gras. There's a wide variety of freshwater fish dishes; a renowned potato pie made with smoked ham, herbs, and galettes; and pancakes created without milk or eggs, but instead served drenched in honey or marinated in raspberry liqueur. Working off any extra pounds you may put on here couldn't be easier, however. Limousin's large lakes and numerous rivers are perfect for watersports. As well as fishing, there are many opportunities for sailing, windsurfing, canoeing and water-skiing. Walking in such scenery is eternally popular, and there are literally hundreds of public routes crisscrossing this undulating region. The Creuse valley, in particular, is a recommended rambling destination.
